Breeding/Development: Bred from the South African variety Outeniqua crossed with an experimental male, Southern Star is a high-alpha aroma hop.

Brewing Application: With punchy, complex aromatics and a high oil content, Southern Star makes an outstanding finishing or dry hop in IPAs and pale ales. Its low cohumulone makes it a good candidate for contributing clean bitterness if used during the boil.

Sensory: Prominent fruity character (pineapple, tropical fruit, red berry) combined with citrus (tangerine), floral, watermelon, pine, spice, and caramel.
